Recipe: Roasted Chicken over Sweet Potatoes



  • 1 whole chicken
  • 3 sweet potatoes
  • 2 onions
  • 1-2 tbsps. organic extra virgin olive oil
  • Sea salt
  • Pepper
  • Balsamic vinegar
  • 1 tbsp. butter
  • Onion powder
  • Garlic Powder
  • Sage
  • A side of greens
    Cooking Instructions:
  1. Chop up a three sweet potatoes in a large bowl.
  2. Cut up two onions.
  3. Mix up the onions with the sweet potatoes.
  4. Pour in 1-2 tbsps. of organic extra virgin olive oil with the onions and sweet potatoes and mix.
  5. Sprinkle a touch of sea salt and pepper over the mixture.
  6. Pour the sweet potato mixture into a pan to serve as the bedding for your chicken.
  7. Wash, prep, and clean a whole chicken. Pat dry. Remove the giblets.

    (I like to prepare the liver by sprinkling sea salt and Balsamic vinegar on top, and then bake it in the oven for 10 minutes at 350°F.)

  8. Melt 1 tbsp. of butter.
  9. Brush melted butter all over the chicken, inside and out. Prepare a rub by mixing onion powder, garlic powder, sage, salt, and pepper in a small dish.
  10. Spread rub on the top, bottom, and sides (including inside) of the chicken.
  11. Add chicken to pan with the sweet potatoes.
  12. Preheat oven to 425°.
  13. Cook chicken for first 15 minutes at 425°.
  14. Cook chicken for another hour at 375° until the juices run clear.
  15. Let the chicken cool and spread the juices around.
  16. Serve with a side of greens and enjoy!
